- 2 tablespoons of extra-virgin olive oil
- 1 medium onion, chopped
- 2 medium chopped carrots
- 2 stalks chopped celery
- 1 medium chopped red bell pepper
- 2 cloves
- Minced garlic
- 1 ½ teaspoon of Italian seasoning
- ½ teaspoon of ground pepper
- ¼ teaspoon of salt
- 8 cups of low-sodium vegetable broth
- 1 medium head green cabbage and halved and sliced
- 1 large chopped tomato
- 2 teaspoons of white wine vinegar
Steps to make
Firstly, heat oil in a saucepan over medium heat. Then add some carrot, onion and celery into it. Then cook them until the vegetables begin to soften about 8 minutes. Add some garlic, bell pepper, Italian seasoning, salt and pepper and cook again.
Then add cabbage, broth and tomato and increase the heat to high and bring to a boil. Reduce heat to maintain a simmer, partially cover and cook until all the vegetables are tender about 20 minutes more. Remove from heat and stir in vinegar.
